- 1 leg of lamb (5-7 lbs)
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
- Preheat oven to 375°F.
- Mix garlic, olive oil, rosemary, and thyme into a paste.
- Score the lamb and rub the garlic herb paste all over.
- Roast the lamb at 375°F for about 20 minutes per pound, or until the internal temperature reaches 145°F for medium doneness.
